Ingredients

  • 2 sheets Whole wheat puff pastry sheets (thawed if frozen)
  • 200 grams Cooked ham (diced)
  • 150 grams Mushrooms (finely chopped)
  • 100 grams Low-fat ricotta cheese
  • 2 stalks Green onions (thinly sliced)
  • 1 large Egg (lightly beaten)
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Milk (for egg wash)

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Heat the olive oil in a skillet over medium heat. Add the chopped mushrooms and cook for 4-5 minutes until softened and any liquid has evaporated.

Step 3

Add the diced ham to the skillet and cook for another 2 minutes to warm through. Remove from heat and set aside to cool slightly.

Step 4

In a mixing bowl, combine the cooked ham and mushroom mixture, ricotta cheese, green onions, salt, and black pepper. Stir until well blended.

Step 5

Roll out the puff pastry sheets on a lightly floured surface. Cut out 12 circles using a 3-inch (7.5 cm) round cookie cutter or a glass.

Place half of the pastry circles on the prepared baking sheet, leaving some space between each.

Spoon about 1 tablespoon of the filling onto the center of each circle on the baking sheet, leaving the edges clear.

Brush the edges of the filled pastry circles with a little of the beaten egg.

Place the remaining pastry circles on top of the filled ones and press the edges together with a fork to seal.

Mix the remaining beaten egg with 1 tablespoon of milk to make an egg wash. Brush the tops of the pies with the egg wash for a golden finish.

Using a small knife, cut a tiny slit in the top of each pie to allow steam to escape.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.

Remove the pies from the oven and let them cool slightly before serving. Enjoy warm or at room temperature!
