Ingredients

  • 6 pieces Sausages (pork or beef, preferably Irish-style)
  • 2 large Yellow onions
  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 2 cloves Garlic cloves
  • 1 cup Guinness stout (or other stout beer)
  • 1 cup Beef or chicken stock
  • 1 tablespoon Brown sugar
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon All-purpose flour
  • 1 tablespoon Fresh parsley (for garnish, optional)

Directions

Step 1

Peel and thinly slice the onions. Mince the garlic cloves.

Step 2

Heat a large skillet or sauté pan over medium heat and add the olive oil and 1 tablespoon of butter.

Step 3

Add the sausages to the pan and brown them on all sides, about 8-10 minutes. Remove the sausages from the pan and set aside.

Step 4

In the same pan, add the remaining 1 tablespoon of butter. Once melted, add the sliced onions and a pinch of salt.

Step 5

Cook the onions over medium heat, stirring frequently, until caramelized (about 15 minutes). Reduce the heat if the onions are browning too quickly.

Step 6

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 7

Sprinkle the flour over the onions and stir well, cooking for 1-2 minutes to remove the raw flour taste.

Step 8

Slowly add the Guinness stout to the pan, stirring constantly to deglaze the pan and create a sauce.

Step 9

Add the beef or chicken stock, brown sugar, thyme, salt, and black pepper. Stir to combine and bring to a gentle simmer.

Step 10

Return the sausages to the pan. Cover with a lid and let them simmer in the sauce for 15-20 minutes, or until the sausages are cooked through and the sauce has thickened.

Step 11

Taste and adjust seasoning if needed.

Step 12

Garnish with freshly chopped parsley before serving, if desired. Serve hot with mashed potatoes, crusty bread, or over rice for a complete meal.
