Ingredients

  • 4 large (10-inch) Flour tortillas
  • 2 cups Shredded cheddar cheese
  • 1.5 cups Shredded Monterey Jack cheese
  • 1 pound Ground beef
  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 cup Canned black beans, drained and rinsed
  • 1 cup Frozen corn, thawed
  • 1 cup Canned diced tomatoes, drained
  • 2 tablespoons Taco seasoning
  • 0.5 teaspoon Salt
  • 2 tablespoons Fresh cilantro, chopped (optional)
  • 0.5 cup Sour cream (for serving)
  • 0.5 cup Salsa (for serving)
  • 1 as needed Nonstick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Spray a 9-inch pie dish or round baking pan with nonstick cooking spray.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 2-3 minutes until it begins to soften.

Step 3

Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned and fully cooked, about 6 minutes. Drain excess fat if necessary.

Step 4

Stir in the minced garlic, black beans, corn, diced tomatoes, taco seasoning, and salt. Cook for an additional 2-3 minutes until the mixture is well combined and heated through. Remove from heat and stir in fresh cilantro if using.

Step 5

Place one flour tortilla on the bottom of the prepared pie dish. Spread a layer of the beef and vegetable mixture evenly over the tortilla, then sprinkle with a mix of cheddar and Monterey Jack cheese.

Step 6

Repeat the layering process with the remaining tortillas, beef mixture, and cheese until all ingredients are used, ending with a final layer of cheese on top.

Step 7

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese on top is melted and bubbly.

Step 8

Allow the quesadilla pie to cool for 5 minutes before slicing into wedges.

Step 9

Serve warm with sour cream and salsa on the side. Enjoy!
