Ingredients

  • 227 grams unsalted butter
  • 200 grams granulated sugar
  • 1 piece large egg
  • 2 teaspoons pure vanilla extract
  • 300 grams all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1 teaspoon baking powder
  • 0.5 teaspoons salt
  • 50 grams powdered sugar (for dusting)

Directions

Step 1

In a large mixing bowl, cream together the unsalted butter and granulated sugar using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.

Step 2

Add the egg and vanilla extract to the bowl, and beat until fully incorporated.

Step 3

In a separate bowl, whisk together the all-purpose flour, ground cinnamon, ground cardamom, baking powder, and salt.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft cookie dough forms. Avoid over-mixing to ensure a tender texture.

Step 5

Divide the dough in half, flatten it into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes to firm up.

Step 6

Preheat the oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 7

Lightly flour a clean surface and roll out one disc of dough to about 6mm (1/4-inch) thickness. Use cookie cutters to shape the dough into your desired forms, and transfer the cookies to the prepared baking sheets.

Step 8

Repeat the rolling and cutting process with the remaining dough.

Step 9

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are just beginning to turn golden. Be careful not to overbake.

Step 10

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Step 11

Once cooled, dust the cookies generously with powdered sugar before serving. Store in an airtight container at room temperature for up to 5 days.
