Ingredients

  • 2 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter, melted and cooled
  • 0.75 cups Milk
  • 2 teaspoons Vanilla extract
  • 2 pieces Large eggs
  • 1.5 cups Fresh raspberries
  • 1 cups White chocolate chips
  • 0.25 cups Powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it with non-stick spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Step 3

In a separate medium mixing bowl, whisk the melted butter, milk, vanilla extract, and eggs until smooth and fully incorporated.

Step 4

Gradually add the wet ingredients to the dry ingredients, gently folding the mixture with a spatula until just combined. Be careful not to overmix, as this can cause the muffins to become dense.

Step 5

Carefully fold in the fresh raspberries and white chocolate chips until evenly distributed throughout the batter.

Step 6

Divide the batter evenly between the prepared muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with just a few moist crumbs.

Step 8

Remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Optional: Once cooled, lightly dust the tops of the muffins with powdered sugar for an elegant finish.

Step 10

Serve and enjoy these indulgent white chocolate raspberry muffins!
