Ingredients

  • 4 large Russet potatoes
  • 2 teaspoons Olive oil

  • 0.333 cup Goat cheese
  • 2 tablespoons Fresh tarragon leaves (finely chopped)
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Parmesan cheese (grated)
  • 2 tablespoons Chopped chives (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C). Wash and dry the potatoes thoroughly.

Step 2

Rub the potatoes with olive oil and place them directly on the oven rack. Bake for 50–60 minutes or until they are fork-tender.

Step 3

Remove the potatoes from the oven and allow them to cool slightly, about 10 minutes, until they are cool enough to handle.
