In a large mixing bowl, whisk together the all-purpose flour and salt.
Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs with a few pea-sized pieces of butter remaining.
Stir in the sour cream until the dough starts to come together. If the dough is too dry, add a teaspoon of water at a time until it holds together.
Turn the dough out onto a lightly floured surface and knead gently a few times to bring it fully together. Shape the dough into a flat disc, wrap it in plastic wrap, and refrigerate for at least 1 hour.
