Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic
  • 4 cups baby spinach
  • 1 cup feta cheese
  • 2 tablespoons pine nuts
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 cups water or chicken broth (for cooking orzo)

Directions

Step 1

Bring 4 cups of water or chicken broth to a boil in a medium saucepan. Add the orzo pasta and cook for 8-10 minutes, or until al dente. Drain and set aside.

Step 2

While the orzo is cooking, heat a dry skillet over medium heat. Add the pine nuts and toast them for 2-3 minutes, stirring frequently, until golden and fragrant. Remove from the skillet and set aside.
