Ingredients

  • 1 pound ground sirloin
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery stalks, diced
  • 2 medium potatoes, peeled and diced
  • 14.5 ounces canned diced tomatoes (with juices)
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen green beans
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat a large stockpot or Dutch oven over medium-high heat. Add olive oil.

Step 2

Add the ground sirloin to the pot, breaking it up with a wooden spoon. Cook until browned, about 5–7 minutes. Remove and set aside.

Step 3

In the same pot, add the diced onion and garlic. Sauté until softened and fragrant, about 2–3 minutes.

Step 4

Stir in the diced carrots and celery. Cook for an additional 5 minutes, stirring occasionally.

Step 5

Add the potatoes, beef broth, diced tomatoes (with juices), Worcestershire sauce, dried thyme, dried oregano, salt, and black pepper. Stir to combine.

Step 6

Return the cooked ground sirloin to the pot and bring the mixture to a boil.

Step 7

Reduce the heat to low and simmer, uncovered, for 25–30 minutes, or until the potatoes are tender.

Step 8

Stir in the frozen green beans and cook for another 5 minutes, just until warmed through.

Step 9

Taste and adjust seasonings as needed. Remove from heat.

Step 10

Ladle the soup into bowls, garnish with chopped fresh parsley (if using), and serve warm.
