  • 3 medium carrots
  • 4 medium potatoes
  • 1 large leeks
  • 2 pieces celery stalks
  • 14 ounces smoked sausage (e.g., kielbasa or bratwurst)
  • 1 cup green beans
  • 15 ounces canned white beans (drained and rinsed)
  • 6 cups beef or vegetable broth
  • 1 piece bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley (chopped)

Directions

Step 1

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.

Step 2

Peel and dice the onion and garlic. Add them to the pot and sauté until softened and translucent, about 5 minutes.

Peel and slice the carrots and potatoes into bite-sized pieces. Slice the leek into rounds and chop the celery. Add the vegetables to the pot and stir.
