Ingredients

  • 12 pieces Lasagna noodles
  • 2 cups Ricotta cheese
  • 1 cup Parmesan cheese, grated
  • 2 cups Mozzarella cheese, shredded
  • 4 cups Spinach, fresh
  • 1 large Egg
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 3 cups Marinara sauce
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Nutmeg, ground
  • 0.25 cup Fresh basil, for garnish

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the lasagna noodles in a large pot of salted boiling water until al dente, approximately 8-10 minutes. Drain and set aside.

Step 3

Heat olive oil in a skillet over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

Step 4

Add fresh spinach to the skillet and sauté until wilted, about 3-4 minutes. Allow to cool slightly, then chop finely.

Step 5

In a large bowl, combine ricotta cheese, 1/2 cup of Parmesan cheese, 1/2 cup of mozzarella cheese, the chopped spinach, egg, salt, pepper, and ground nutmeg. Mix until thoroughly combined.

Step 6

Spread 1 cup of marinara sauce on the bottom of a 9x13-inch baking dish.

Step 7

On a clean surface, lay out a cooked lasagna noodle. Spread a thin layer of the ricotta-spinach mixture onto the noodle and roll it up tightly. Place the roll seam-side down in the prepared baking dish.

Step 8

Repeat with the remaining lasagna noodles and ricotta mixture until all are used up.

Step 9

Pour the remaining marinara sauce evenly over the lasagna rolls. Top with the remaining mozzarella cheese and Parmesan cheese.

Step 10

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

Step 11

Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Step 12

Remove from the oven and let rest for 5-10 minutes. Garnish with fresh basil before serving.

Step 13

Serve warm and enjoy this deconstructed ravioli masterpiece!
