Ingredients

  • 2 lbs Chicken thighs (bone-in, skin-on preferred)
  • 0.75 cups Soy sauce
  • 1 cups Water
  • 0.5 cups Brown sugar
  • 3 cloves Garlic (minced)
  • 1 inch piece Ginger (sliced thinly)
  • 2 tbsp Rice vinegar
  • 2 tbsp Honey
  • 1 tbsp Sesame oil
  • 2 stalks Green onions (sliced for garnish)
  • 1 tbsp Sesame seeds (toasted, for garnish)

Directions

Step 1

Rinse the chicken thighs and pat them dry with paper towels. Set aside.

Step 2

In a large pot or Dutch oven, combine the soy sauce, water, brown sugar, minced garlic, sliced ginger, rice vinegar, honey, and sesame oil. Stir until the sugar is dissolved.

Step 3

Place the chicken thighs into the pot, ensuring they are submerged in the liquid. If needed, add a bit more water to cover the chicken.

Step 4

Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to low and cover the pot with a lid.

Step 5

Simmer the chicken for 30-40 minutes, turning it occasionally to ensure even cooking and flavor infusion.

Step 6

After the cooking time, check the chicken for doneness. The internal temperature should reach 165°F (74°C), and the meat should be tender and easily come off the bone.

Step 7

If you want a thicker sauce, remove the chicken from the pot and let the sauce simmer uncovered for an additional 5-10 minutes until it reduces to your desired consistency.

Step 8

Serve the chicken hot, spooning the sauce over it. Garnish with sliced green onions and toasted sesame seeds.

Step 9

Pair with steamed rice or noodles for a complete meal.
