Ingredients

  • 500 grams fresh spinach
  • 1 large onions
  • 4 large garlic cloves
  • 2 tablespoons tomato paste
  • 400 grams diced tomatoes
  • 500 milliliters vegetable stock
  • 1 teaspoon coriander powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons butter or ghee
  • 2 tablespoons fresh cilantro
  • 200 grams short-grain rice (optional, for serving)
  • 400 milliliters water (for rice, if using)

Directions

Step 1

Wash the fresh spinach thoroughly under running water to remove any dirt or grit. Roughly chop the spinach and set aside.

Step 2

Finely chop the onion and mince the garlic cloves.

Step 3

In a large pot, heat the butter or ghee over medium heat. Add the chopped onions and sauté until golden and soft, about 5 minutes.

Step 4

Add the minced garlic and cook for another minute until fragrant.

Step 5

Stir in the tomato paste and cook for 1-2 minutes to deepen its flavor.

Step 6

Add the diced tomatoes and mix well. Allow them to cook for 5 minutes, stirring occasionally.

Step 7

Pour in the vegetable stock and bring the mixture to a gentle boil. Season with coriander powder, ground cumin, salt, and black pepper. Stir to combine.

Step 8

Reduce the heat to low and add the chopped spinach to the pot, stirring until it wilts and is fully incorporated into the sauce.

Step 9

Let the mixture simmer on low heat for 10-15 minutes until the flavors meld together and the spinach is tender.

Step 10

Sprinkle the dish with freshly chopped cilantro before serving.

Step 11

If serving with rice: Rinse the rice under cold water until the water runs clear. In a separate pot, bring 400 milliliters of water to a boil, add the rice, and a pinch of salt. Reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is fully cooked and fluffy.

Step 12

Serve the Egyptian-style spinach over the prepared rice or alongside warm bread. Enjoy!
