Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 3 units garlic cloves, minced
  • 500 grams ground lamb (or beef)
  • 0.5 teaspoons ground cinnamon
  • 1 teaspoons ground cumin
  • 1 teaspoons ground coriander
  • 2 tablespoons tomato paste
  • 400 grams diced tomatoes, canned
  • 150 grams frozen peas
  • 2 medium cubed carrots
  • 250 ml vegetable stock or water
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 4 large potatoes, peeled and cubed
  • 3 tablespoons butter
  • 100 ml milk
  • 0.25 teaspoons nutmeg
  • 2 tablespoons grated Parmesan cheese (optional)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.

Step 3

Add minced garlic and cook for another minute until fragrant.

Step 4

Stir in the ground lamb (or beef) and cook until browned, breaking it apart with a wooden spoon as it cooks.

Step 5

Mix in cinnamon, cumin, and coriander. Cook for 2 minutes to toast the spices lightly.

Step 6

Add tomato paste and cook for 1 minute, stirring to coat the meat.

Step 7

Pour in the diced tomatoes, cubed carrots, peas, and vegetable stock. Season with salt and black pepper. Simmer for 15-20 minutes until the sauce thickens and the vegetables are tender. Remove from heat.

Step 8

While the meat mixture simmers, prepare the mashed potato topping. Boil the potatoes in salted water for 15-20 minutes until fork-tender.

Step 9

Drain the potatoes and mash them with butter, milk, and a pinch of nutmeg until smooth. Adjust seasoning with salt if necessary.

Step 10

Spread the meat mixture evenly in the bottom of a baking dish.

Step 11

Layer the mashed potatoes on top of the meat mixture, spreading evenly to cover the filling completely.

Step 12

For added flavor, sprinkle grated Parmesan cheese over the potato layer (optional).

Step 13

Bake the pie for 25-30 minutes, or until the top is golden and bubbling.

Step 14

Remove from the oven and let the pie rest for 5 minutes before serving. Enjoy!
