  • 4 cups Water
  • 2 cloves Garlic cloves

  • 2 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 1 medium Tomato
  • 0.5 medium Red onion
  • 2 tablespoons Fresh parsley
  • 0.25 teaspoon Cayenne pepper or chili flakes (optional)
  • 4 pieces Pita bread (for serving)

Directions

Step 1

Rinse the dried fava beans thoroughly under cold water and inspect for any debris.

Step 2

In a large pot, combine the fava beans and water. Bring to a boil over high heat, then reduce the heat to low and simmer for about 2 hours, or until the beans are very soft and can easily be mashed with a fork. You may need to add more water during cooking to keep the beans submerged.

Once the beans are cooked, drain any excess water if needed, but leave a small amount to help mash the beans to a smooth, slightly chunky consistency.
