  • 2 cups canned chickpeas, drained and rinsed
  • 1 14-ounce can canned diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and sauté for 5-7 minutes until softened and translucent.
