Ingredients

  • 4 pieces large eggs
  • 2 tablespoons olive oil
  • 1 cup crushed tomatoes
  • 2 pieces garlic cloves
  • 0.5 teaspoons red chili flakes
  • 6 leaves fresh basil leaves
  • 2 tablespoons grated Parmesan cheese
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 4 slices crusty bread (optional, for serving)

Directions

Step 1

Peel and finely mince the garlic cloves.

Step 2

Heat a large non-stick skillet over medium heat and add the olive oil.

Step 3

Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.

Step 4

Stir in the crushed tomatoes and season with salt, black pepper, and red chili flakes. Let the sauce simmer for 3-4 minutes to allow the flavors to meld.

Step 5

Using the back of a spoon, create four small wells in the sauce, evenly spaced.

Step 6

Crack an egg into each well, careful not to break the yolks.

Step 7

Cover the skillet with a lid and cook for 4-5 minutes, or until the egg whites are set, and the yolks are cooked to your desired doneness.

Step 8

Remove the skillet from heat and sprinkle the eggs with grated Parmesan cheese and fresh basil leaves for garnish.

Step 9

Serve immediately, either on its own or with slices of crusty bread for dipping.
