Ingredients

  • 2 large Eggs
  • 2 slices Bread
  • 1 tablespoon Butter
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Fresh parsley (optional, for garnish)
  • 1 teaspoon Cooking oil or nonstick spray

Directions

Step 1

Heat a nonstick skillet over medium-low heat and lightly grease it with 1 teaspoon of cooking oil or nonstick spray.

Step 2

Crack two eggs into the skillet, being careful not to break the yolks. Let them cook gently until the whites are set but the yolks are still runny, about 3-4 minutes. Do not flip the eggs. Remove the eggs once cooked and set them aside on a plate.

Step 3

While the eggs are cooking, place two slices of bread into a toaster and toast until golden brown.

Step 4

Spread 1 tablespoon of butter evenly over the toasted bread slices while they are still warm.

Step 5

Arrange the buttered toast on a plate side by side, leaving a slight gap between them.

Step 6

Place one sunny-side-up egg on top of each slice of toast, yolk-side up, so they resemble 'eyes' looking at you.

Step 7

Sprinkle a pinch of salt and black pepper over the eggs for seasoning.

Step 8

Optionally, garnish with a sprinkle of freshly chopped parsley for a touch of color and freshness.

Step 9

Serve immediately and enjoy!
