Ingredients

  • 6 pieces Eggs
  • 3 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 2 cups Milk
  • 1 cup Vegetable broth
  • 3 tablespoons Dijon mustard
  • 1 tablespoon Yellow mustard
  • 1 tablespoon White vinegar
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Parsley (optional, for garnish)

Directions

Step 1

Place the eggs in a saucepan and cover them with water. Bring the water to a boil, then reduce the heat and let the eggs simmer for 10 minutes.

Step 2

While the eggs are cooking, melt the butter in a medium saucepan over medium heat.

Step 3

Once the butter is melted, whisk in the flour and cook for 1-2 minutes to form a smooth roux. Be careful not to let it brown.

Step 4

Gradually add the milk and vegetable broth, whisking constantly to avoid lumps. Cook the mixture for 3-4 minutes until it thickens slightly.

Step 5

Stir in Dijon mustard, yellow mustard, vinegar, sugar, salt, and black pepper. Taste and adjust seasoning if needed. Keep the sauce warm on low heat.

Step 6

Once the eggs are done, drain the hot water and run cold water over the eggs to cool them. Peel the eggs and slice them in half lengthwise.

Step 7

To serve, place the egg halves on a plate and pour the warm mustard sauce over them. Garnish with chopped parsley if desired.

Step 8

Serve with boiled potatoes, crusty bread, or a side salad for a complete meal. Enjoy your Bavarian-style Eggs in Mustard Sauce!
