Ingredients

  • 2 pieces Bell peppers
  • 4 pieces Eggs
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Parsley (optional, chopped)
  • 2 tablespoons Grated cheese (optional)

Directions

Step 1

Wash and dry the bell peppers. Cut them into 1/2-inch thick rings and remove any seeds or white membranes from inside the rings.

Step 2

Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.

Place the bell pepper rings flat in the skillet and cook for 1 to 2 minutes on one side to soften slightly.
