Ingredients

  • 4 large Eggs
  • 0.25 cup (grated) Parmesan cheese
  • 2 tablespoons (finely chopped) Chives
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

Step 2

Carefully separate the egg whites from the yolks. Place the egg whites in a clean, dry mixing bowl, and place the yolks into individual small bowls to keep them intact.

Step 3

Using an electric mixer, whip the egg whites on high speed until stiff peaks form. This should take 2-3 minutes.

Step 4

Gently fold the grated Parmesan cheese, chopped chives, salt, and black pepper into the whipped egg whites using a spatula. Be careful not to deflate the mixture.

Step 5

Spoon the whipped egg white mixture onto the prepared baking sheet, creating four cloud-like mounds. Use the back of a spoon to create a small well in the center of each mound.

Step 6

Bake the egg white clouds in the preheated oven for 3 minutes, or until they are slightly golden on the edges.

Step 7

Carefully remove the baking sheet from the oven, and gently slide one egg yolk into the well of each egg white cloud.

Step 8

Return the baking sheet to the oven and bake for an additional 3 minutes, or until the yolks are just set but still slightly runny.

Step 9

Remove from the oven and serve immediately. Garnish with additional chopped chives or a sprinkle of Parmesan, if desired.
