Ingredients

  • 4 medium potatoes
  • 3 tablespoons olive oil
  • 1 medium onion
  • 4 large eggs
  • 1.5 teaspoons sumac
  • 0.5 teaspoons ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Peel the potatoes and cut them into small cubes, roughly 1/2-inch in size.

Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat.

Once the oil is hot, add the cubed potatoes and cook them for 10-12 minutes, stirring occasionally, until they are golden and crispy. Remove the potatoes from the skillet and set aside.
