Peel the potatoes and cut them into small cubes, roughly 1/2-inch in size.
Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat.
Once the oil is hot, add the cubed potatoes and cook them for 10-12 minutes, stirring occasionally, until they are golden and crispy. Remove the potatoes from the skillet and set aside.
While the potatoes are cooking, finely dice the onion.
In the same skillet, add the remaining 1 tablespoon of olive oil and the diced onion. Cook for 3-4 minutes until the onion is soft and lightly caramelized.
Return the potatoes to the skillet with the onions. Season with sumac, ground cumin, salt, and black pepper. Toss to combine and heat through for 2 minutes.
Make four small wells in the potato mixture. Crack one egg into each well.
Lower the heat to medium-low, cover the skillet with a lid, and cook for 4-5 minutes or until the eggs are cooked to your desired level of doneness.
Remove the skillet from the heat. Garnish the dish with freshly chopped parsley and an extra sprinkle of sumac, if desired.
Serve immediately with warm pita bread or a side of fresh vegetables for a complete meal.
