Ingredients

  • 500 grams eggplant
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 medium onion
  • 3 pieces garlic cloves
  • 1 inch ginger
  • 1 medium tomato
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon ground coriander
  • 0.5 teaspoon garam masala
  • 1 teaspoon salt
  • 2 tablespoons fresh coriander leaves

Directions

Step 1

Wash and dice the eggplants into small cubes and set aside.

Step 2

Finely chop the onion, garlic cloves, and ginger. Dice the tomato.

Step 3

Heat the vegetable oil in a large pan over medium heat.

Add cumin seeds to the hot oil and let them crackle for a few seconds.

Add the chopped onions and sauté for 4-5 minutes until they turn golden brown.
