Ingredients

  • 2 large eggplants
  • 1 medium onion
  • 4 tablespoons sunflower oil
  • 2 tablespoons lemon juice

  • 0.25 teaspoon black pepper
  • 1 clove garlic (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash the eggplants thoroughly, pat them dry, and pierce them in several places with a fork to allow steam to escape during roasting.
