Slice the eggplants lengthways into 1/4-inch thick slices. You should have about 8-10 slices in total.
Sprinkle both sides of the slices with salt and let them rest for 15 minutes to draw out excess moisture. Rinse and pat them dry with paper towels.
Brush the eggplant slices lightly with olive oil and season with black pepper.
