  • 2 cups cooked long-grain rice
  • 0.5 cup chicken or vegetable broth
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Slice the eggplants into 1/4-inch thick rounds and sprinkle both sides with salt to draw out moisture. Set aside for 15 minutes, then pat them dry with a paper towel.
