Wash and peel the eggplants. Dice them into small cubes.
In a large pot, bring about 4 cups of water to a boil. Add the diced eggplants and 1 teaspoon of salt. Boil for 7-10 minutes, or until the eggplants are soft and tender.
Drain the cooked eggplant well, pressing gently with a spoon or paper towel to remove excess moisture. Let them cool for a few minutes.
Meanwhile, finely chop the garlic and parsley.
Transfer the drained eggplant to a large mixing bowl and mash it using a fork or potato masher until it forms a chunky paste.
Add in the minced garlic, parsley, flour, breadcrumbs, egg, parmesan cheese (if using), ground black pepper, and chili flakes (if using). Mix well to form a thick batter.
Divide the mixture into small portions and shape them into patties, about 2 inches in diameter.
Heat the vegetable oil in a large skillet over medium heat. Once the oil is hot, carefully place the patties into the pan, leaving space between each one.
Cook the patties for 3-4 minutes on each side, or until they are golden-brown and crispy. Adjust the heat as necessary to avoid burning.
Remove the fritters from the pan and place them on a plate lined with paper towels to drain excess oil.
Serve warm with your favorite dip, yogurt sauce, or as a side to a main meal.
