Ingredients

  • 2 medium-sized eggplant (aubergine)

  • 0.25 teaspoon chili flakes (optional)
  • 0.5 cup vegetable oil (for frying)

Directions

Step 1

Wash and peel the eggplants. Dice them into small cubes.

In a large pot, bring about 4 cups of water to a boil. Add the diced eggplants and 1 teaspoon of salt. Boil for 7-10 minutes, or until the eggplants are soft and tender.

Drain the cooked eggplant well, pressing gently with a spoon or paper towel to remove excess moisture. Let them cool for a few minutes.
