Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Slice the eggplants in half lengthwise. Score the flesh in a crosshatch pattern without piercing the skin. Brush the cut sides with 1 tablespoon of olive oil and place them cut-side down on the baking sheet.
Roast the eggplants in the preheated oven for 25–30 minutes, or until the flesh is soft and golden brown. Remove from the oven and let cool slightly.
While the eggplants are roasting, finely dice the red onion and garlic. Chop the kalamata olives into small pieces.
Once the eggplants are cool enough to handle, scoop out the flesh with a spoon and discard the skins. Place the flesh in a mixing bowl and mash it gently with a fork until slightly chunky.
In a small skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and garlic, and sauté for 3–4 minutes until softened and fragrant.
Add the sautéed onion and garlic to the mashed eggplant. Stir in the chopped olives, capers, red wine vinegar, parsley, oregano, crushed red pepper flakes, salt, and black pepper.
Taste the relish and adjust seasoning as needed, adding more salt, pepper, or vinegar to suit your preference.
Transfer the relish to a serving bowl and let it sit at room temperature for at least 15 minutes to allow the flavors to meld together.
Serve the relish with crackers, warm pita, or crostini, or use it as a condiment for grilled meats or fish. Store leftovers in an airtight container in the refrigerator for up to 4 days.
