  • 2 medium Eggplant (Aubergine)
  • 500 grams Ground beef
  • 3 tablespoons Olive oil
  • 1 large Yellow onion
  • 3 cloves Garlic cloves
  • 400 grams Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 0.5 teaspoons Ground cinnamon
  • 1 teaspoon Dried oregano
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 50 grams Parmesan cheese
  • 150 grams Mozzarella cheese
  • 2 tablespoons Fresh parsley (optional, for serving)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Slice the eggplants into 1/2-inch thick rounds. Lay them on a tray, sprinkle both sides with a little salt, and let them sit for 15 minutes to draw out excess moisture.

Step 3

Pat the eggplant slices dry with a paper towel. Heat 2 tablespoons of olive oil in a large skillet over medium heat and fry the eggplant slices in batches until golden brown on both sides. Set aside on a plate lined with paper towels to absorb excess oil.
