Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Wash the eggplants and slice them lengthwise into halves. Use a knife to score the flesh in a crosshatch pattern, being careful not to cut through the skin.
