Crack 4 large eggs and separate the yolks from the whites. Place the egg whites in a small bowl and whisk lightly with a fork. Set aside.
Wash and dry 1 cup of fresh spinach or chard leaves. If using chard, chop into bite-sized pieces and remove any tough stems.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat.
Add the minced garlic to the skillet and sauté for 30 seconds, or until fragrant.
Add the spinach or chard to the skillet and cook for 1–2 minutes, stirring occasionally, until wilted. Remove from heat and set aside.
Wipe out the skillet with a paper towel and lightly grease it with a small amount of olive oil or non-stick spray. Return the skillet to the stove over low-medium heat.
