Prep Time:15 mins

Total Time:25 mins
Servings: 4

Ingredients

  • 4 large ripe tomatoes
  • 4 large eggs
  • 4 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 2 tbsp fresh chives
  • 1 tbsp sweet pickle relish
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp paprika

Directions

Step 1

Place the eggs in a medium-sized pot and add water until they are fully submerged. Bring the water to a boil over medium heat, then reduce to a simmer and cook the eggs for 10 minutes.

Step 2

While the eggs are cooking, prepare an ice bath by filling a bowl with ice and cold water. Once the eggs are done, transfer them into the ice bath to cool for 5-10 minutes. Peel the eggs once cooled.

Step 3

Chop the peeled eggs into small chunks and place them in a mixing bowl.

Step 4

Add mayonnaise, Dijon mustard, chopped chives, sweet pickle relish, salt, and black pepper to the eggs. Mix well until evenly combined. Taste and adjust seasoning if necessary.

Step 5

Wash the tomatoes and, using a sharp knife, make vertical cuts about 1/2-inch apart along the tomato, being careful not to slice all the way through. This will create the 'accordion' effect, where the tomato can be gently fanned open.

Step 6

Carefully stuff each accordion tomato with a generous spoonful of egg salad, ensuring it fills the gaps evenly.

Step 7

Sprinkle a pinch of paprika over the stuffed tomatoes for color and flavor.

Step 8

Serve immediately or refrigerate until ready to enjoy. These make a beautiful appetizer or a creative light lunch.
