Ingredients

  • 200 grams All-purpose flour
  • 100 grams Unsalted butter
  • 2 tablespoons Granulated sugar
  • 3 tablespoons Cold water
  • 6 pieces Eggs
  • 1 can (14 oz) Sweetened condensed milk
  • 1 cup Evaporated milk
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoons Salt

Directions

Step 1

Prepare the crust: In a large mixing bowl, combine the all-purpose flour, sugar, and salt.

Step 2

Cut the cold butter into small cubes. Add them to the flour mixture and cut in using a pastry cutter or fork until the mixture resembles coarse crumbs.

Step 3

Add cold water, one tablespoon at a time, mixing gently until the dough comes together. Do not overmix.

Step 4

Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 20 minutes.

Step 5

Preheat the oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie pan.

Step 6

Transfer the dough to the pie pan, trim the edges, and crimp them decoratively. Set aside.

Step 7

Prepare the filling: Separate one egg white into a small bowl and set aside for later use.

Step 8

In a large mixing bowl, whisk together the remaining eggs, sweetened condensed milk, evaporated milk, vanilla extract, and salt until fully combined and smooth.

Step 9

In a separate bowl, lightly whisk the reserved egg white, then fold it gently into the filling mixture.

Step 10

Pour the filling into the prepared pie crust. Place the pie in the oven and bake for 45-50 minutes, or until the center is set but still jiggles slightly when shaken.

Step 11

Remove the pie from the oven and let cool completely on a wire rack. The filling will set further as it cools.

Step 12

Slice and serve at room temperature or chilled. Enjoy your creamy egg pie!
