Ingredients

  • 1 piece English muffin
  • 1 piece Egg
  • 1 slice Canadian bacon
  • 1 slice American cheese
  • 1 tablespoon Butter
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 spray Non-stick cooking spray

Directions

Step 1

Split the English muffin in half and lightly toast both pieces. Set them aside.

Step 2

Heat a non-stick skillet over medium heat and add half the butter. Once melted, place the Canadian bacon in the pan and cook for about 1 minute on each side until heated through. Remove and set aside.

Step 3

Spray the same skillet lightly with non-stick cooking spray. Crack the egg into the skillet, being careful not to break the yolk. Season the egg with salt and black pepper.

Step 4

If a round shape is desired, cook the egg in an egg ring or use a small metal cookie cutter in the pan. For an over-easy egg, carefully flip it over after 2 minutes and cook for another 1 minute. For a firmer yolk, cook the egg for 3 minutes on one side and 2 minutes on the other.

Remove the egg from the skillet and set aside. Reduce the heat to low and add the remaining butter to the skillet.

Step 6

Place the bottom half of the toasted English muffin in the skillet. Add one slice of American cheese on top, followed by the prepared egg and Canadian bacon. Top with the other half of the English muffin to complete the sandwich.

Cover the skillet with a lid for 1-2 minutes to help the cheese melt completely.

Remove the sandwich from the skillet, let it cool slightly, and serve warm.
