Ingredients

  • 6 pieces Eggs
  • 4 medium (chopped) Tomatoes
  • 1 medium (finely chopped) Onion
  • 4 pieces (minced) Garlic cloves
  • 1 inch (grated) Ginger
  • 2 tablespoons Sesame seeds
  • 2 tablespoons Cooking oil
  • 0.5 teaspoons Turmeric powder
  • 1 teaspoons Red chili powder
  • 1.5 teaspoons Coriander powder
  • 1 teaspoons Cumin seeds
  • 0.5 teaspoons Garam masala
  • 1 teaspoons (or to taste) Salt
  • 1.5 cups Water
  • 2 tablespoons (chopped, for garnish) Fresh cilantro

Directions

Step 1

Place the eggs in a saucepan, cover with water, and bring to a boil. Once boiling, let the eggs cook for 8-9 minutes for hard-boiled consistency. Remove from heat, transfer to cold water, peel, and set aside.

Step 2

Heat a dry skillet over medium heat and toast the sesame seeds until golden and fragrant, about 2-3 minutes. Remove from heat and grind into a fine powder using a spice grinder or mortar and pestle. Set aside.

Step 3

In a large pan, heat the cooking oil over medium heat. Add cumin seeds and let them splutter for a few seconds.

Step 4

Add the chopped onions and sauté until golden brown, about 4-5 minutes.

Step 5

Stir in the minced garlic and grated ginger, and cook until fragrant, about 1-2 minutes.

Step 6

Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes break down into a paste and the oil starts to separate from the mixture, about 8-10 minutes.

Step 7

Mix in the ground sesame seeds and stir well to combine.

Step 8

Pour in the water and bring the gravy to a gentle simmer. Let it cook for 5 minutes to allow the flavors to meld.

Step 9

Carefully place the hard-boiled eggs into the gravy. Lightly score the eggs with a knife beforehand to help them absorb the flavors.

Step 10

Sprinkle the gravy with garam masala and stir gently.

Step 11

Simmer for another 5 minutes, allowing the eggs to heat through and absorb the flavors of the gravy.

Step 12

Garnish with freshly chopped cilantro and serve hot with steamed rice, flatbreads, or naan.
