Ingredients

  • 2 slices Thick slices of bread
  • 2 large Eggs
  • 3 tablespoons Butter
  • 1 cup Shredded cheddar cheese
  • 6 stalks Asparagus spears
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder

Directions

Step 1

Trim the woody ends off the asparagus spears. Toss the asparagus with olive oil, a pinch of salt, black pepper, and garlic powder.

Step 2

Heat a skillet over medium heat and char the asparagus for about 5 minutes, flipping halfway. Remove and set aside.

Step 3

Using a round cookie cutter or the rim of a glass, cut a 2-inch hole in the center of each bread slice, creating a 'basket'.

Step 4

Heat 1 tablespoon of butter in a skillet over medium heat. Place one slice of bread and its cut-out center into the skillet.

Step 5

Crack an egg into the hole of the bread. Cook for 2-3 minutes until the egg white sets. Flip carefully and cook for an additional minute. Repeat for the second slice of bread.

Remove the egg-in-a-basket slices from the skillet and set aside. Wipe the skillet clean if needed.
