Ingredients

  • 2 pieces English muffins
  • 2 pieces Large eggs
  • 4 pieces Bacon strips
  • 2 pieces Cheddar cheese (slices)
  • 1 tablespoon Butter
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Cooking oil

Directions

Step 1

Preheat a non-stick skillet over medium heat.

Step 2

Cook the bacon strips in the skillet until crispy, about 5-7 minutes. Remove and place them on a paper towel-lined plate to drain excess grease.

Step 3

Slice the English muffins in half and toast them in a toaster or on a dry skillet until golden and slightly crispy. Set aside.

Step 4

In the same skillet, add 1 teaspoon of cooking oil or use a little of the bacon grease. Crack the eggs into the skillet, being careful not to break the yolks. Cook the eggs sunny-side-up or to your preferred doneness (about 2-3 minutes for sunny-side-up). Sprinkle with salt and pepper.

While the eggs are cooking, butter the toasted English muffins lightly on the cut sides.

Assemble the muffin: On the bottom half of each English muffin, place a slice of cheddar cheese, 2 strips of bacon, and one cooked egg. Top with the other half of the muffin.

Optionally, place the assembled muffins back in the skillet over low heat, lightly pressing down, and cover with a lid for 1-2 minutes to allow the cheese to melt completely.
