  • 4 large Eggs

  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Paprika
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel and dice the potatoes into small 1/2-inch cubes and set them aside in a bowl of water to prevent browning.

Chop the bacon into 1-inch pieces. Finely chop the onion and mince the garlic cloves.

Heat a large skillet over medium heat and add the bacon. Cook until crispy, about 6-8 minutes. Remove the bacon with a slotted spoon and set it on a paper towel-lined plate to drain.

In the same skillet, remove excess bacon grease, leaving about 1-2 tablespoons in the pan. Add the olive oil to the skillet and heat over medium-high heat.
