Ingredients

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Granulated sugar
  • 0.5 cup Unsalted butter (cold, cubed)
  • 1 cup Cheddar cheese (shredded)
  • 1 medium Yellow onion (finely diced)
  • 1 tablespoon Olive oil or butter (for sautéing onion)
  • 0.75 cup Whole milk (cold)
  • 1 large Egg (for brushing, optional)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a small skillet over medium heat, add 1 tablespoon of olive oil or butter and sauté the finely diced onion until soft and caramelized, about 6-8 minutes. Remove from heat and let cool slightly.

Step 3

In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.

Step 4

Using a pastry cutter or your fingertips, cut in the cold, cubed butter until the mixture resembles coarse crumbs.

Step 5

Stir in the shredded cheddar cheese and caramelized onions, ensuring an even distribution throughout the dry mixture.

Step 6

Make a well in the center of the flour mixture and pour in the cold milk. Gently stir just until the dough comes together—be sure not to overmix.

Step 7

Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick round. Use a 2.5-inch biscuit cutter to cut out biscuits, then place them on the prepared baking sheet. Re-roll the scraps to cut out as many biscuits as possible.

Step 8

If desired, beat the egg and brush it lightly over the tops of the biscuits for a golden finish.

Step 9

Bake in the preheated oven for 13-15 minutes or until the biscuits are golden brown on top.

Step 10

Remove from the oven and let cool slightly before serving. Enjoy warm on their own or with a dollop of butter!
