Ingredients

  • 3 large yellow bell peppers
  • 4 mini cucumbers
  • 1 medium red onion
  • 1 cup white vinegar
  • 0.5 cup granulated sugar
  • 1 teaspoon salt
  • 2 teaspoons mustard seeds
  • 1 teaspoon turmeric powder
  • 0.5 teaspoon crushed red pepper flakes
  • 0.5 cup water

Directions

Step 1

Wash and pat dry the vegetables. Remove the seeds from the yellow bell peppers and finely dice them. Dice the mini cucumbers and finely chop the red onion.

Step 2

In a medium saucepan, combine white vinegar, water, granulated sugar, salt, mustard seeds, turmeric powder, and crushed red pepper flakes.

Step 3

Heat the mixture over medium heat, stirring until the sugar has dissolved completely, about 3-4 minutes.

Step 4

Add the diced bell peppers, cucumbers, and red onion to the saucepan. Stir to coat the vegetables in the brine.

Step 5

Bring the mixture to a gentle simmer and cook for 5-6 minutes, stirring occasionally, until the vegetables have slightly softened but still retain a crunch.

Step 6

Remove the saucepan from heat and let the relish cool to room temperature.

Step 7

Transfer the relish to a clean jar or airtight container. Refrigerate for at least 2 hours before serving to allow the flavors to meld together.

Step 8

Serve the Sunshine Relish chilled or at room temperature. It can be stored in the refrigerator for up to 2 weeks.
