Ingredients

  • 2 lbs collard greens
  • 1 piece smoked turkey leg
  • 1 large onion
  • 4 cloves garlic cloves
  • 6 cups chicken broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Rinse the collard greens thoroughly under cold water to remove dirt and grit. Remove the stems and cut the leaves into 2-inch pieces.

Step 2

Peel and finely chop the onion and garlic cloves.

Step 3

Heat a large pot or Dutch oven over medium heat and add the olive oil.

Step 4

Add the chopped onion and garlic to the pot. Sauté for 3-4 minutes, stirring frequently, until softened and fragrant.

Step 5

Place the smoked turkey leg in the pot, and pour in the chicken broth. Increase the heat to medium-high and bring the mixture to a boil.

Step 6

Once boiling, reduce the heat to low and simmer the turkey leg in the broth for 30 minutes to flavor the liquid.

Step 7

Add the collard greens to the pot gradually, stirring them in as they wilt to make room for the rest.

Step 8

Stir in the apple cider vinegar, brown sugar, red pepper flakes, salt, and black pepper.

Step 9

Cover the pot and let the greens simmer on low heat for 45-60 minutes, or until the greens are tender, stirring occasionally.

Step 10

Once cooked, remove the smoked turkey leg from the pot. Shred the meat off the bone using a fork and return the meat to the greens, discarding the bone.

Step 11

Taste the greens and adjust the seasoning with additional salt or vinegar, if desired.

Step 12

Serve Edna's Greens warm as a side dish, and enjoy this comforting Southern classic!
