Ingredients

  • 250 grams all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 125 grams unsalted butter
  • 150 grams granulated sugar
  • 2 large eggs
  • 120 milliliters milk
  • 1 teaspoon vanilla extract
  • 100 grams raisins
  • 100 grams dried apricots, chopped
  • 50 grams dried cranberries
  • 1 tablespoon orange zest

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a medium-sized mixing bowl, sift together the all-purpose flour, baking powder, ground cinnamon, and ground nutmeg. Set aside.

Step 3

Using a hand or stand mixer, cream the unsalted butter and granulated sugar together on medium speed until light and fluffy.

Step 4

Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Add the vanilla extract and orange zest, and mix until combined.

Step 5

Reduce the mixer speed to low and alternate adding the dry ingredients and milk in three additions, starting and ending with the dry ingredients. Mix until just combined to avoid overmixing.

Step 6

Fold in the raisins, chopped dried apricots, and dried cranberries using a spatula, ensuring they are evenly distributed throughout the batter.

Step 7

Spoon the batter into the prepared loaf pan and spread it evenly using the back of the spoon or a spatula.

Step 8

Bake in the preheated oven for 55-60 minutes, or until a skewer inserted into the center of the loaf comes out clean.

Step 9

Allow the fruit loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 10

Slice and serve on its own or with a spread of butter. Store leftovers in an airtight container at room temperature for up to 4 days.
