Ingredients

  • 175 g Butter
  • 50 g Icing sugar
  • 150 g Plain flour
  • 50 g Cornflour
  • 1 tsp Vanilla extract
  • 50 g Butter (for filling)
  • 100 g Icing sugar (for filling)
  • 0.5 tsp Vanilla extract (for filling)

Directions

Step 1

Preheat your oven to 180°C (355°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, cream the butter and icing sugar together until light and fluffy. Add the vanilla extract and mix to combine.

Step 3

Sift the plain flour and cornflour together, then gradually add to the butter mixture. Mix until a soft dough forms.

Step 4

Roll teaspoons of dough into small balls and place on the prepared baking tray. Flatten each ball slightly with a fork to create a patterned top.

Step 5

Bake the cookies for 12-15 minutes or until they are just lightly golden. Remove from the oven and let them cool on the tray for 5 minutes before transferring to a wire rack to cool completely.

To make the filling, beat the butter, icing sugar, and vanilla extract together until smooth and creamy.

Once the cookies are cooled, spread a small amount of filling on the flat side of one cookie, then sandwich it together with another cookie. Repeat until all cookies are sandwiched.
