Ingredients

  • 2 cups edamame (shelled, fresh or frozen)
  • 1 cup cherry tomatoes
  • 0.5 cup fresh cilantro
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 small garlic clove
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground black pepper

Directions

Step 1

If using frozen edamame, bring a pot of salted water to a boil and cook the edamame for 3–5 minutes until tender. Drain and rinse under cool water. Set aside to cool completely.

Step 2

Halve the cherry tomatoes and place them in a large mixing bowl.

Step 3

Finely chop the fresh cilantro and add it to the mixing bowl with the tomatoes.

Step 4

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and ground black pepper.

Add the cooked and cooled edamame to the mixing bowl with the tomatoes and cilantro.

Pour the lemon dressing over the edamame mixture and toss until everything is evenly coated.
