Ingredients

  • 1 cup Edamame (shelled)
  • 1 cup Broccoli florets
  • 1 large Avocado
  • 2 tablespoons Lime juice
  • 2 tablespoons Fresh cilantro (chopped)
  • 1 medium Garlic clove (minced)
  • 1 small Jalapeño (seeded and minced)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground cumin
  • 1 tablespoon Olive oil
  • 2 tablespoons Water (if needed)

Directions

Step 1

1. Bring a medium pot of water to a boil, and blanch the broccoli florets for 2 minutes. Remove and immediately transfer to an ice water bath to preserve their vibrant color and crispness. Drain well.

2. In the same boiling water, cook the edamame for 3–4 minutes until tender. Drain and set aside.

3. In a food processor, combine the blanched broccoli, cooked edamame, avocado (pitted and peeled), lime juice, cilantro, garlic, jalapeño, salt, and cumin.

4. Blend the mixture while gradually drizzling in the olive oil. Process until smooth and creamy. If the mixture is too thick, add water 1 tablespoon at a time until the desired consistency is achieved.
