Ingredients

  • 4 slices (about 2 oz each) Foie gras
  • 1 teaspoon Kosher salt
  • 1 teaspoon Freshly ground black pepper
  • 4 medium (thinly sliced) Yellow onions
  • 2 heads Garlic
  • 3 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Brown sugar
  • 2 tablespoons Balsamic vinegar
  • 1 cup Water
  • 4 slices (optional, for serving) Toasted brioche or baguette slices

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice off the tops of the garlic heads to expose the cloves. Drizzle 1 tablespoon of olive oil over the garlic, wrap each head in aluminum foil, and roast in the oven for 30-35 minutes or until the cloves are soft and caramelized. Set aside to cool.

Step 3

In a large skillet over medium heat, heat 2 tablespoons of olive oil and 2 tablespoons of unsalted butter. Add the sliced onions and cook, stirring frequently, for about 10-15 minutes or until they begin to caramelize.
