Ingredients

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 0.5 cup granulated sugar
  • 2 pieces large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons amaretto liqueur
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup rolled oats
  • 1 cup semi-sweet chocolate chips
  • 1 cup white chocolate chips
  • 1 cup crushed pretzels
  • 0.5 cup sweetened shredded coconut
  • 0.5 cup toasted chopped nuts (almonds or pecans)
  • 0.5 cup raisins or dried cranberries (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes using a hand or stand mixer.

Step 3

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and Amaretto liqueur until fully incorporated.

Step 4

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 5

Fold in the rolled oats, semi-sweet chocolate chips, white chocolate chips, crushed pretzels, shredded coconut, chopped nuts, and dried fruit (if using) until evenly distributed. The dough will be soft and chunky.

Step 6

Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers still look slightly soft. Do not overbake, as the cookies will continue to set as they cool.

Step 8

Remove the baking sheets from the oven and let the cookies cool on the trays for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Store the cookies in an airtight container at room temperature for up to a week—or freeze for longer storage.
