Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter, softened
  • 0.75 cups Granulated sugar
  • 2 large Eggs
  • 1.5 teaspoons Vanilla extract
  • 1 cups Plain Greek yogurt
  • 1 large Apple, peeled and diced
  • 1 cups Fresh or frozen cranberries, coarsely chopped
  • 0.25 cups Brown sugar
  • 0.25 cups Chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square baking pan, or line it with parchment paper.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Step 5

Reduce the mixer speed to low and alternate adding the dry ingredients and the Greek yogurt, beginning and ending with the dry ingredients. Mix until just combined.

Step 6

Gently fold in the diced apple and cranberries using a spatula. Be careful not to overmix.

Step 7

Pour the batter into the prepared baking pan and spread it evenly.

Step 8

In a small bowl, mix together the brown sugar and chopped nuts (if using). Sprinkle this mixture evenly over the top of the batter.

Step 9

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before serving.

Step 11

Serve plain or with a dusting of powdered sugar for an extra touch.
