Ingredients

  • 4 whole garlic bulbs
  • 2 tablespoons olive oil
  • 0.25 teaspoons salt
  • 0.5 cups water
  • 2 sprigs optional fresh thyme or rosemary sprigs

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut off the top 1/4 inch of each garlic bulb to expose the cloves inside, leaving the bulbs intact.

Step 3

Place the garlic bulbs on a sheet of aluminum foil or in a small baking dish. Drizzle the olive oil over the tops of the garlic, ensuring each bulb is coated. Sprinkle with the salt.

Step 4

If using, add fresh thyme or rosemary sprigs around or on top of the garlic for additional flavor.

Step 5

Seal the garlic tightly in the foil (if using a baking dish, cover it with foil) and place it in the oven.

Step 6

Roast for 35-45 minutes until the garlic cloves are golden brown and soft to the touch.

Step 7

Remove the garlic from the oven and let it cool slightly until it's safe to handle.

Step 8

Squeeze the roasted garlic cloves out of their skins into a blender or food processor.

Step 9

Add 1/2 cup of water to the blender to help achieve a smooth consistency, and blend until the purée is velvety and lump-free. Start with a smaller amount of water, adding more as needed to reach your desired consistency.

Step 10

Taste the purée and adjust the seasoning with additional salt, if needed.

Step 11

Transfer the garlic purée to a serving dish or an airtight container. Use immediately as a spread, dip, or ingredient in other dishes, or store in the refrigerator for up to 5 days.
