Ingredients

  • 4 medium-sized zucchini
  • 2 tablespoons olive oil

  • 1.5 cups cherry tomatoes

  • 1 cup mozzarella cheese, shredded

  • 1 teaspoon dried oregano
  • 0.5 teaspoon crushed red pepper flakes
  • 0.5 cup fresh basil leaves
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Wash and trim the ends of the zucchinis. Use a spiralizer or julienne peeler to create zucchini noodles (zoodles). Set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Mince the garlic and sauté it for 1-2 minutes until fragrant.

Add the cherry tomatoes to the skillet and cook for 3-4 minutes, stirring occasionally, until they begin to blister and soften.
